A LITTLE HISTORY
A food truck is a large vehicle equipped to cook and sell food.[1] Some, including ice cream trucks, sell frozen or prepackaged food; others have on-board kitchens and prepare food from scratch. Sandwiches, hamburgers, french fries, and other regional fast food fare is common. In recent years, associated with the pop-up restaurant phenomenon, food trucks offering gourmet cuisine and a variety of specialties and ethnic menus, have become particularly popular.[2] Food trucks, along with portable food kiosks and food carts, are on the front line of the street food industry that serves an estimated 2.5 billion people every day.[3][4]
Food concession services are used all over the United States (and the world). He added shelving, drawers, kitchenware, food and medical supplies; he served dried beans, cornmeal, coffee, greasy bacon & salt pork, dried or salted or smoked beef, and other preserved food stuffs. He also stocked clean water in a barrel! Such were the humble beginning of the modern concession service. Another early example of the modern concession truck is the “lunch wagon” established by vendor Walter Scott in 1872. In the 1950s “mobile canteens” were sanctioned for operation on US Army bases. Today concession services provide nourishment in cities both big and small, for occasion both informal and somewhat formal. The popularity of mobile concession equipment is on the rise!
