Concession trailer businesses today are much more than hotdog and ice cream carts! They are much more sophisticated than the old food carts and offer much more than simple pre-cooked foods. Customers can enjoy a fresh, healthy meal, cooked to order, and the food quality compares to that of many respected restaurants. It’s a fact that an increasing number of ambitious chefs and restaurateurs are discovering that custom mobile food concession equipment is the most affordable way to break into the highly lucrative food business!
There are many benefits to owning and running a mobile concession business today. Let’s face it, the restaurant business is not an easy one, and it demands a significant investment of time and money, even for a modest start-up business. The start-up investment for a fixed location food service will include buying space, supplying the kitchen, buying furniture and fixtures, linens, silverware, place settings…and a mass of other items. These up-front expenses can easily exceed a quarter of a million dollars for a simple, no-frills 1200 square foot restaurant, even before staff or food products are added. Even a very humbly furnished cafe that size will be at least $100,000 to furnish.
At a conservative cost of between $50 and $225 per square foot for a conventional brick-and-mortar restaurant, the small overhead costs of a customized concession business can be a very smart option, dropping the blockade to entrance for many potential cooks and chefs and entrepreneurs. This considerably reduced outlay also leans toward a much faster evolution to productivity. Should the project not work out, the risks are also much fewer.
There are some basic things to deliberate before acquiring a mobile food service concession. Principal among these is the kinds of foods to be offered. Diverse cooking techniques call for different fittings. Preparation and cooking of food on-site is somewhat dissimilar to simply serving food primed at an off-site facility. This difference will affect the costs and functioning of the concession equipment for its ultimate use. It will also immediately alter any licensing and insurance costs. Here are a few factors to be thought out:
- on-site versus off-site food preparation
- type of cooking and service
- all power needs
- cooling & freezing needs
- fire safety devices
- number of staff working
- any storage requirements
- dish washing issues

A LITTLE HISTORY
A food truck is a large vehicle equipped to cook and sell food. Some, including ice cream trucks, sell frozen or prepackaged food; others have on-board kitchens and prepare food from scratch. Sandwiches, hamburgers, french fries, and other regional fast food fare is common. In recent years, associated with the pop-up restaurant phenomenon, food trucks offering gourmet cuisine and a variety of specialties and ethnic menus, have become particularly popular. Food trucks, along with portable food kiosks and food carts, are on the front line of the street food industry that serves an estimated 2.5 billion people every day.
Food concession services are used all over the United States (and the world). Carnivals, sporting events, construction sites, and such – even everyday places of work, study or play such as office complexes, college campuses, auto repair shops, industrial parks, farmers markets, movie sets and military bases, etc. – anywhere meals or snacks are in demand, concession services are a necessity. The Texas “chuckwagon” is one precursor to the American food truck or concession service. In the late 1800s, cowhands were on the trail herding cattle from the Texas and the Southwest to markets in the East or North, and they needed food for energy. The “father of the Texas Panhandle,” a Texas cattle rancher named Charles Goodnight turned a solid old US Army wagon into a wagon for foodstuffs. He added shelving, drawers, kitchenware, food and medical supplies; he served dried beans, cornmeal, coffee, greasy bacon & salt pork, dried or salted or smoked beef, and other preserved food stuffs. He also stocked clean water in a barrel! Such were the humble beginning of the modern concession service. Another early example of the modern concession truck is the “lunch wagon” established by vendor Walter Scott in 1872. In the 1950s “mobile canteens” were sanctioned for operation on US Army bases. Today concession services provide nourishment in cities both big and small, for occasion both informal and somewhat formal. The popularity of mobile concession equipment is on the rise!
